Our Passion for Food and Planet

We do things a little bit differently here, with just a nod to our Channel Island heritage in our ‘prix fixe’ 3-course table d’hote menus. Looking for a sample menu? We don’t have one, as every menu is unique to you, the season and the available produce of the day, but you’ll see plenty of examples of our food in our social media feeds. All our table d’hote menus are priced at £40 per person. As every menu is created just for you, we’re able to accommodate a range of needs from vegetarian to dysphagia, made without gluten to alcohol free. If there’s something you’d really like on your menu, just say and we’ll do our best to incorporate it. Children are more than welcome to dine, whether they’re having a mini version of the ‘grown up’ menu or familiar home-comforts made for younger taste buds (family friendly), all freshly made by us (we’ll even hide the veggies if you ask us to!).

Every year, the UK wastes 9.5 million tonnes of food which is costly to both the nation’s pockets but also to the environment we live in. Cumbria has a wealth of high quality, artisan produce to showcase and with such quality, we want to avoid wasting it. By not holding a set menu of foods, we only bring in what we need for your menu. You can learn more about this on our Greener Tourism page. We understand this is a bit unusual and ‘not the norm’ in UK hospitality, but every little bit we do starts to make bigger changes.

Our philosophy is that great food should speak for itself, the region and reflect what’s ready to eat now. We believe the dining experience shouldn’t be rushed, your table is yours until closing time; relaxed, personal service in the Victorian grandeur of our dining room. Real food, made from fresh not frozen packets, by our classically trained chef. From the award-winning marmalade and homemade bread for your toast at breakfast, to the meringues, mousses and sponges in your dessert; it’s made by us. We complement this with fabulous tea, coffee and hot chocolate from Carvetii, the finest fish and game from Bell’s of Carlisle, and meats and cheeses from Cranstons.

Having served his apprenticeship under the gaze of the much respected Adi Roithmier in the finest hotel in Guernsey, Darryl continued his training, specialising in pastry. He moved out of banquets and hotel catering to develop skills as a specialist diet chef and catering production management. After a brief interlude back in hospitality in the UK, he returned to the Channel Islands and took over hotel services management for the States of Guernsey. His passion for hospitality didn’t dwindle and in 2020, he took the leap to move to the northern fells of Cumbria. He brings with him the Austrian influence of his first Executive Head Chef, the continental pastry passions of his head of section and a French flair from the history books of Guernsey along with British culinary classics.
